A bit about me
First and foremost comes my passion for all things delicious! Whilst I have learnt to make things look gorgeous, for me it has always been about the taste! Once it tastes fabulous and is packed full of flavour and freshness, I can then concentrate on making it look pretty. Good ingredients, herbs and spices are key to everything I cook.
I trained at the Cordon Bleu in London and although I am a classically French trained chef, my style of cooking is eclectic. I believe in delivering incredible flavours from a variety of countries. I have worked in numerous restaurants both in the UK and abroad. Over the years, I have worked in a French Château, on a luxury yacht in the South of France, many ski resorts and I also opened restaurants in Greece and Old Amersham, Bucks, to name just a few. I most recently helped my good friends open the kitchen at the Little Orchard Deli in Chesham.
My mission is to make you feel relaxed, confident and inspired in the kitchen, by joining my fun, informal but informative class. I will be teaching you all my tricks of the trade, ensuring that you take your newfound confidence home with you!
We recently had a dinner party of twenty, to celebrate a significant birthday, and Claudine was the chef for the evening. She was wonderful and I highly recommend her.
Claudine came over to check out my kitchen, a few weeks before and we discussed the menu. From then on, we spoke often about finer details. On the night Claudine arrived early. She brought all the ingredients with her and whatever else she needed. Some dishes were made the day before, for extra flavour and some partially cooked as to not smell the house too much.
She was organised with great attention to detail and the night was a huge success! The food was delicious and cooked to perfection. Worthy of the finest restaurants. Her sauces and desserts were exceptional.
